Tortellini of Funk
Oct. 21, 2005
The simple version:
- 1 serving (meaning how much you eat, not what the package calls a serving) of your favorite tortellini per person (preferably the refrigerated kind, but frozen or dried will work)
- 1/3 c good marinara sauce per person
- 2 Tbsp cream (half and half or whipping cream) per person
- Boil water and start the tortellini according to the directions on the package.
- When there's about 1 minute left on the tortellini, pour marinara sauce into bowl. Put in the microwave on high for 30 seconds.
- Drain tortellini. Add cream to bowl; add tortellini. Stir. Eat.
- Send feedback. Too creamy? Not creamy enough?
The jazzed-up version:
Use this variation when you want a treat or for guests. It's richer than the quick version. It serves two.
- 1 small package refrigerated tortellini
- 2 Tbsp butter or margarine
- 2 Tbsp flour
- 1/2 c cream
- 1/4 c marinara sauce
- 1 handful fresh basil, spinach, or mint (yes, this is good), chopped up
- Start water for tortellini. Put butter in small saucepan and heat until it melts. Add flour and cook, stirring, for 5 minutes.
- Add cream slowly, stirring constantly, until flour clumps dissolve. Turn heat to lowest setting. Add marinara sauce and herbs or spinach. Cover. Keep stirring occasionally.
- Cook tortellini according to instructions on package.
- Pour cream sauce over tortellini and serve.
