Menu:

Tortellini of Funk

Oct. 21, 2005

The simple version:

1 serving (meaning how much you eat, not what the package calls a serving) of your favorite tortellini per person (preferably the refrigerated kind, but frozen or dried will work)

1/3 c good marinara sauce per person

2 Tbsp cream (half and half or whipping cream) per person

Boil water and start the tortellini according to the directions on the package.

When there's about 1 minute left on the tortellini, pour marinara sauce into bowl. Put in the microwave on high for 30 seconds.

Drain tortellini. Add cream to bowl; add tortellini. Stir. Eat.

Send feedback. Too creamy? Not creamy enough?

The jazzed-up version:

Use this variation when you want a treat or for guests. It's richer than the quick version. It serves two.

1 small package refrigerated tortellini

2 Tbsp butter or margarine

2 Tbsp flour

1/2 c cream

1/4 c marinara sauce

1 handful fresh basil, spinach, or mint (yes, this is good), chopped up

Start water for tortellini. Put butter in small saucepan and heat until it melts. Add flour and cook, stirring, for 5 minutes.

Add cream slowly, stirring constantly, until flour clumps dissolve. Turn heat to lowest setting. Add marinara sauce and herbs or spinach. Cover. Keep stirring occasionally.

Cook tortellini according to instructions on package.

Pour cream sauce over tortellini and serve.
